Eggplant Italiano - cooking recipe

1 medium eggplant
2 - 8 oz. cans tomato sauce
1-2 tsp. oregano
1/2 c. sharp cheese, shredded
6 oz. mozzarella cheese, sliced
Preparation

Pare eggplant and slice into 1/8 inch slices. Spread 2 Tbsp. tomato sauce in the bottom of a 2 quart casserole. Layer half of eggplant, 1 can tomato sauce, half of oregano, and half of sharp cheese. Repeat layers. Cover. Microwave at high power 14-16 minutes, rotating dish 1/4 turn after 8 minutes. Add mozzarella cheese. Microwave at high power 1-2 minutes, or until cheese has melted.
