Vegetable Rice - cooking recipe

Ingredients
    1 c. chopped onion
    1 c. finely chopped carrot
    1 c. finely chopped celery
    3/4 c. finely chopped sweet red pepper
    1/2 c. finely chopped green pepper
    2 cloves garlic, minced
    2 1/3 c. water
    1 tsp. Cajun seasoning
    1 1/3 c. long grain rice, uncooked
    2 Tbsp. chopped fresh parsley
Preparation
    Coat a large nonstick skillet with vegetable cooking spray; place over medium-high heat until hot.
    Add onion and next 5 ingredients; saute 3 to 4 minutes or until tender.
    Remove vegetable mixture from heat; set aside and keep warm.
    Combine water and Cajun seasoning in a medium saucepan, stirring well. Bring to a boil.
    Stir in rice.
    Cover, reduce heat and simmer 20 to 25 minutes or until rice is tender and liquid is absorbed. Combine vegetable mixture and cooked rice in a large bowl.
    Add chopped parsley and toss gently to combine.
    Yields 4 cups.
