Ingredients

7 lb. watermelon rind
4 lb. sugar
1 pt. vinegar
1/2 tsp. oil of cloves
1/2 tsp. oil of cinnamon
Preparation

Pare rind from watermelon.
Cover with water and simmer until tender, about 1/2 hour.
Drain.
Make syrup by bringing to a boil the sugar, vinegar and oils.
Pour over rind.
Let stand overnight.
