Lemon Pie - cooking recipe

Ingredients
    1 (20 oz.) can frozen pineapple juice concentrate
    2 Tbsp. (heaping) Emes gelatin
    1/4 tsp. grated lemon rind
    2 Tbsp. frozen orange juice concentrate
    5 Tbsp. fresh lemon juice
    1 1/2 c. water
Preparation
    Mix all ingredients and place in refrigerator to set up.
    Take out when firm and whiz in blender until very smooth.
    Pour in baked crust and put back in refrigerator; let set up until firm. Garnish with lemon twist and mint.
    Contains 50 calories per serving.
