Cream Of Potato Soup - cooking recipe

Ingredients
    2 c. small diced potatoes
    2 minced medium onions
    2 stalks celery (including leaves), diced
    2 1/2 c. boiling water
    4 Tbsp. butter or margarine
    3 1/2 Tbsp. flour
    1 1/2 tsp. salt
    1/4 tsp. black pepper
    2 c. milk
    1 Tbsp. minced parsley
Preparation
    Cook potatoes, onion and celery in the boiling water, covered, until very tender.
    Meanwhile melt the butter in top of double boiler.
    Add flour; stir until smooth, then add seasonings and milk.
    Cook while stirring until smooth and thickened, then rub the potato mixture, liquid and all, through a sieve.
    You should have 3 cups puree.
    Add to sauce with parsley.
    Heat and serve.
    Serves 6.
