Carrot Cake - cooking recipe

Ingredients
    2 c. flour, sifted (plain)
    2 tsp. baking powder
    1 1/2 tsp. salt
    1 1/2 tsp. baking soda
    2 tsp. cinnamon
    2 c. sugar
    1 1/2 c. oil
    4 eggs
    2 c. finely grated carrots
    1 (8 1/2 oz.) can crushed pineapple, drained
    1/2 c. nuts, chopped
    1 (3 1/2 oz.) can flaked coconut
Preparation
    Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs.
    Mix well.
    Add carrots, pineapple, nuts and coconut.
    Blend thoroughly.
    Pour into 3 (9-inch) layer pans or a 9 x 13-inch greased pan.
    Bake at 350\u00b0 for 35 to 40 minutes in layer pans, 1 hour in 9 x 13-inch pan.
    Top with Cream Cheese Icing.
