Artichoke Salad - cooking recipe

Ingredients
    1 pkg. chicken flavored Rice-A-Roni
    1/2 c. green or red bell pepper, diced
    1 bunch green onion (tops also), diced
    2 jars artichoke hearts
    5 stuffed olives, sliced (optional)
    1/2 c. light mayonnaise
    1/8 tsp. curry powder
    1 tsp. fresh lemon juice or ReaLemon
Preparation
    Prepare rice according to package directions.
    Cool.
    Add onions, olives and green peppers.
    Drain artichokes and save liquid.
    Mix lemon juice, mayonnaise and liquid from artichokes and mix well.
    Pour over rice mixture.
    Add artichokes last. Refrigerate overnight.
    Serve cold.
