Pork Chops With Apricot Stuffing - cooking recipe

Ingredients
    1/2 lb. mushrooms
    1/3 c. chopped onion
    1/3 c. chopped celery
    1/2 c. butter, divided
    1/2 c. dried apricots
    1 c. bread crumbs
    1/4 tsp. ground sage
    1/2 c. chopped parsley
    4 (1-inch) double loin pork chops
    salt and pepper to taste
    1 c. chicken stock
Preparation
    Preheat oven to 350\u00b0.
    Reserve 4 mushrooms for garnish.
    Slice remainder.
    Saute mushrooms, onion and celery in 1/4 cup butter until tender.
    Reserve 4 apricots; chop remainder and add to mushroom mixture along with bread crumbs, sage and parsley; set aside.
