Rack Of Lamb - cooking recipe

Ingredients
    4 racks of lamb (1 to 1 1/2 lb. each) trimmed
    2 Tbsp. Dijon mustard
    1 c. soft bread crumbs
    1/4 c. minced fresh parsley
    1/4 tsp. salt
    1/4 tsp. pepper
    /4 c. butter or margarine, melted
    1 garlic clove, minced
Preparation
    Preheat oven to 350\u00b0.
    Place lamb on a rack in a greased large roasting pan; brush with mustard.
    In a small bowl, combine the bread crumbs, parsley, salt and pepper.
    Press onto the meat. Combine butter and garlic; drizzle over the meat.
    Bake, uncovered for 35 to 40 minutes or until meat reach desired doneness.
    Yield: 8 servings.
