Chicken Tetrazzini - cooking recipe
Ingredients

1/2 lb. vermicelli
1/2 lb. mushrooms, sliced
6 Tbsp. butter
2 Tbsp. flour
2 c. chicken broth
1 onion, chopped
salt, pepper and nutmeg to taste
1 c. heavy cream
3 Tbsp. sherry
4 to 5 c. chicken, cooked and cubed
1/2 c. sliced black olives
1/2 c. grated Parmesan cheese
Preparation

Saute mushrooms and onion in 3 tablespoons butter.
Set aside. Melt remaining butter; add flour and stir.
Add broth and cook until thickened.
Add spices, cream and sherry and cook for 10 minutes.
Cook vermicelli and drain.
Mix half of sauce with vermicelli and mushrooms.
Put into greased casserole.
Sprinkle with olives and chicken.
Pour remaining sauce over top and sprinkle with cheese.
Bake at 350\u00b0 for 20 to 30 minutes.
