Tomato Rarebit - cooking recipe

Ingredients
    3/4 c. finely chopped tomatoes (about 2)
    1/4 tsp. baking soda
    2 Tbsp. flour
    2 Tbsp. butter
    1 c. milk, heated
    1 1/2 c. shredded Cheddar cheese
    2 eggs, lightly beaten
    1 tsp. dry mustard
    1 tsp. cayenne pepper
    salt to taste
    4 slices toast
Preparation
    Combine tomatoes and baking soda.
    Melt butter in saucepan. Add flour.
    Cook and stir 2 to 3 minutes.
    Slowly pour in heated milk.
    Stir until mix is smooth and thick.
    Add tomatoes, cheese, eggs, mustard and cayenne.
    Season with salt.
    Cook over low heat. Stir until cheese melts and mix is smooth.
    Serve over toast.
    May easily be doubled.
    Serves 4.
