Ingredients

1 c. margarine
2 eggs
3/4 c. coconut
1/2 tsp. salt
3/4 c. white sugar
1 c. cooked carrots, mashed and cooled
2 c. flour
2 tsp. baking powder
Preparation

Mix sugar and eggs; add cooked, cooled carrots and coconut. Sift dry ingredients together and add to creamed mixture.
Drop by spoonfuls on ungreased cookie sheet.
Bake 8 to 10 minutes at 375\u00b0.
When cool, ice with thin mix of powdered sugar, butter and orange juice.
