Sweet 'N' Sour Beef - cooking recipe

Ingredients
    1 Tbsp. shortening
    2 lb. cubed lean stew beef
    1/2 tsp. salt
    2 c. canned tomatoes
    1/3 c. brown sugar
    1/3 c. vinegar
    1/2 c. finely chopped onion
    1/2 bay leaf
    1 green pepper, cut into strips
Preparation
    Melt shortening in a
    large skillet.
    Brown beef on all sides. Add salt, tomatoes,
    brown
    sugar,
    vinegar, onion and bay leaf. Cover skillet, lower
    heat
    and
    let simmer about 2 hours until beef is tender.
    Add
    pepper
    strips;
    cook for 10 more minutes to blend flavors.
    Serve with rice.
