Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. pumpkin pie spice
1 c. finely chopped nuts
8 oz. cream cheese, softened
1/4 c. butter, softened
1 c. confectioners sugar
1 tsp. vanilla
Preparation

Beat 3 eggs in mixer bowl until thick and lemon colored.
Add sugar gradually, beating until smooth.
Add pumpkin and lemon juice; mix well.
Fold in flour, baking powder and pumpkin pie spice.
Spoon into greased 10 x 15-inch baking pan.
Sprinkle with nuts.
Bake at 375\u00b0 for 15 minutes.
Invert onto towel sprinkled with confectioners sugar.
Roll up in towel as for jelly roll. Cool.
Beat cream cheese with remaining ingredients in mixer bowl.
Unroll cake.
Spread with cream cheese mixture; re-roll to enclose filling.
Chill until serving time.
Cut into 1/2-inch slices.
