Hearty Chili - cooking recipe
Ingredients

3 medium potatoes
1 lb. ground sausage
1 (29 oz.) can tomato sauce
1 (15 oz.) can kidney beans (Brooks chili hot beans work well)
2 (4 oz.) cans mushrooms
1 small onion, diced
1/2 green pepper, diced
Preparation

Peel and cut potatoes into bite size pieces.
Cook until tender and drain.
Cook sausage with onion, green pepper and mushrooms until meat is no longer pink.
Drain and return to pan. Add tomato sauce.
Add cooked potato chunks and beans.
Add water to desired consistency.
Add seasonings to taste.
Simmer until ready to serve.
Makes about 3 quarts.
