Shrimp Creole - cooking recipe

Ingredients
    1 lb. shrimp, peeled and deveined
    2 lg. tomatoes, ripe, diced
    1 lg. onion, diced
    1 stick butter
    1/2 c. hot sauce
    white rice
    2 c. Colby and Monterey Jack cheese, shredded
    salt and pepper
    2 Tbsp. cornstarch
Preparation
    In deep frying pan, combine butter, diced onion, and diced tomato.
    Saute on high heat until tomato starts to cook down.
    Add hot sauce and shrimp and cook until shrimp are pink. Add salt and pepper to taste.
    Bring pan to mild boil and add cornstarch to desired thickness.
    Serve mixture over a bed of rice and top with cheese.
    Cheese should melt due to temperature of main dish. Serve.
