Individual Raspberry Cheesecakes - cooking recipe

Ingredients
    24 vanilla wafers
    3 (8 oz.) pkg. cream cheese, softened
    3 eggs
    1 c. sugar
    1 tsp. vanilla
    1/4 tsp. ground nutmeg
    raspberry preserves
Preparation
    Line 24 muffin pans with paper or foil baking cups.
    Place one wafer in bottom of each pan.
    In a large bowl, combine cream cheese, sugar, eggs, vanilla and nutmeg.
    Beat at medium speed until smooth, scraping sides of bowl occasionally.
    Pour mixture into prepared muffin pans, filling 2/3 full.
    Bake at 325\u00b0 for 15 to 20 minutes, or until set.
    Cool.
    Cover pan; refrigerate overnight.
    Before serving, spoon 1 heaping teaspoonful preserves over each cheesecake.
    Remove paper baking cups.
    Yields 24 cheesecakes.
