Jalapeno Corn Bread Muffins - cooking recipe

Ingredients
    2 c. cornmeal
    1 c. flour
    1 tsp. salt
    6 tsp. baking powder
    3 eggs, beaten
    2 to 3 jalapenos, chopped
    1 large onion, chopped
    1/2 c. oil
    1 1/2 lb. can creamed corn
    1 1/2 c. grated Cheddar
Preparation
    Combine first 4 ingredients in large bowl, mix well.
    Add eggs, jalapenos, onion, oil and corn; mix well.
    Gently fold in cheese.
    Line cupcake pan with paper liners.
    Fill 1/2 full with batter.
    Bake at 350\u00b0 for 20 to 25 minutes.
    Yields approximately 2 dozen.
