Carrot Stuffing Casserole - cooking recipe

Ingredients
    4 c. carrot slices
    1 medium onion, chopped
    1 can cream of mushroom soup
    1/2 c. grated Cheddar cheese
    1 1/2 c. herb flavored stuffing mix (i.e. Pepperidge Farm)
    salt
    pepper
    1/2 c. melted butter
Preparation
    Cook carrots until tender; drain.
    Saute onion in 3 tablespoons margarine until soft.
    Stir in soup, salt, pepper, cheese and carrots.
    Spoon into a 2-quart greased casserole dish. Toss bread stuffing mix with 1/2 cup melted butter.
    Spoon on top of carrot mixture.
    Bake at 350\u00b0 for 20 minutes.
