Catfish Amandine - cooking recipe

Ingredients
    6 (5 to 6 oz.) catfish fillets
    salt
    cayenne pepper
    5 egg whites
    3 Tbsp. cornstarch
    2 c. slivered almonds
    3 Tbsp. butter
    oil for deep frying
Preparation
    Rub the catfish well with salt and cayenne pepper.
    Set aside. Lightly beat egg whites until foamy.
    Blend together the beaten egg whites with the cornstarch.
