Mushroom Barley Soup - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1/2 c. onion, chopped
    2 1/2 c. sliced mushrooms
    2 c. water
    1 (13 3/4 oz.) can beef broth
    1/2 c. barley
    1/2 c. chopped parsley
    1 bay leaf
    1/4 tsp. thyme
    1/4 tsp. rosemary
    1/4 tsp. pepper
Preparation
    Over medium heat, saute onion in oil until soft. Add mushrooms; cook about 4 minutes until tender. Add remaining ingredients.
    Bring to a boil.
    Reduce heat to low. Simmer, covered, about 1 hour or until barley is tender.
    Remove bay leaf. Serves 4.
