Spiced Zucchini Bread - cooking recipe
Ingredients

3 c. all-purpose flour
2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 c. finely chopped pecans or walnuts
3 eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 c. shredded zucchini
1 (8 oz.) can crushed pineapple, drained
Preparation

Combine flour, baking powder, soda, salt, cinnamon and nuts. Set aside.
Beat eggs lightly in a large mixing bowl.
Add sugar, oil and vanilla.
Beat until creamy.
Add zucchini and pineapple. Add dry ingredients.
Stir only until all ingredients are moistened.
Pour into 2 well-greased loaf pans.
Bake about 1 1/2 hours.
Cool about 10 minutes before removing to wire rack.
