Zucchini-Carrot Bread - cooking recipe
Ingredients

1/2 c. honey
1/4 c. canola oil
1 large egg
1 1/2 tsp. vanilla extract
3/4 c. all-purpose flour
1/2 c. whole wheat flour
1/2 c. oat bran
1 1/2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/8 tsp. salt
1 c. shredded zucchini
1 c. shredded carrots
2 tsp. grated orange peel
1/4 c. walnuts, chopped (optional)
Preparation

Preheat oven to 350\u00b0.
Spray an 8 x 5-inch loaf pan with nonstick cooking spray.
In a large bowl, whisk together honey, oil, egg and vanilla.
In another bowl, stir together the flours, oat bran, baking powder, cinnamon and salt.
Add dry ingredients to honey mixture with zucchini, carrots and orange peel.
Stir to blend well.
Add walnuts (if desired).
Spoon into pan.
Bake 50 to 60 minutes or until a toothpick inserted in center comes out clean.
Cool completely on a wire rack.
Makes 16 servings (each a 1/2-inch slice).
