Shrimp Gumbo - cooking recipe

Ingredients
    1 c. chopped onions
    1 c. chopped peeled tomato
    1 c. green pepper
    1 tsp. dried thyme
    1 or 2 bay leaves
    1 lb. peeled shrimp
    2 c. sliced okra
    6 c. water or 6 c. chicken broth
    2 Tbsp. oleo
    hot cooked rice
Preparation
    Saute onions and okra in oleo for about 10 minutes, stirring to sear okra.
    Add tomato and saute 5 minutes.
    Add soup stock or broth and green pepper, thyme, bay leaves and shrimp.
    Bring to boil.
    Reduce heat.
    Cover and simmer 1 1/2 hours.
    Serve over rice.
    Makes about 1 quart.
