Gourmet Potatoes Casserole - cooking recipe

Ingredients
    6 medium potatoes, cooked
    2 c. shredded Cheddar cheese
    1/4 c. butter
    1 1/2 c. sour cream (at room temperature)
    1/3 c. chopped onion
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. butter
Preparation
    Cook potatoes in skins; cool, pare and shred coarsely.
    In saucepan, over low heat, melt butter and grated cheese, then remove from heat.
    Blend in sour cream, salt, pepper and onions. Gently fold in potatoes and pour into greased 3-quart casserole. Dot with remaining 2 tablespoons butter.
    Bake, uncovered, at 350\u00b0 for 30 to 35 minutes.
    Serves 8.
