Corn Muffins - cooking recipe

Ingredients
    1 c. all-purpose flour
    4 tsp. baking powder
    2 Tbsp. granulated sugar (double for sweeter muffins)
    1 tsp. salt
    1 c. yellow corn meal
    2 large eggs
    1 c. milk
    1/4 c. vegetable oil
Preparation
    Grease twelve 2 1/2-inch muffin cups.
    Heat oven to 425\u00b0. Sift flour, baking powder, sugar and salt into a medium size mixing bowl.
    Add corn meal; stir to mix well.
    In a small bowl, beat eggs with a fork.
    Add milk and oil.
    Add all at once to dry ingredients; stir until moistened.
    Batter will be lumpy.
    Drop batter from a tablespoon into the prepared muffin cups, filling each cup half to two-thirds full.
    Bake for 15 to 20 minutes, or until golden brown.
    Remove from pan and serve hot with butter.
