Healthy Meat Loaf - cooking recipe

Ingredients
    3 lbs extra lean ground beef
    1 1/2 c rolled oats
    1/2 c onion, minced
    1 t salt (optional)
    1/2 t pepper
    1/2 c egg substitute
    2 c low-fat pasta sauce (choose your favorite - mushroom or other)
    1/2 c fresh parsley, chopped
    1 small can mushroom pieces
Preparation
    Pre-heat oven to 350 degrees.
    Coat two 8 1/2 X 4 1/2 loaf pans with non-stick cooking spray.
    Mix ingredients in a large bowl, reserving 1/2 cup of the pasta sauce.
    Form loaves in pans and brush with reserved sauce.
    Bake for 1 hour.
