Greek Salad Supper - cooking recipe

Ingredients
    5 medium potatoes, peeled, cooked and diced
    2 Tbsp. each minced parsley and onion
    2 Tbsp. cider vinegar
    1 Tbsp. oil
    salt and pepper to taste
    1/2 lb. cooked, cold shrimp
    1/3 c. mayo
    1/2 c. pitted black olives
    1 head lettuce
    2 tomatoes, cut into wedges
    1 jar artichokes
    1 cucumber, sliced into spears
    1/4 lb. Feta cheese, diced
    1 large green onion, sliced into rings
    1/2 red onion, sliced and separated
    1 bunch radishes
Preparation
    Mix potatoes, parsley, onion, cider vinegar, oil, salt and pepper.
    Chill until ready to serve.
    Put on a bed of lettuce.
    Mound potato mixture in center.
    Arrange around potatoes: tomato wedges, artichokes, cucumber spears, green onion rings, red onion, pitted black olives, diced Feta cheese, shrimp and radishes.
    Serves 6.
