Summer Garden Zucchini Boats - cooking recipe

Ingredients
    1 slice bacon
    2 medium zucchini
    1/3 c. chopped onion
    1 Tbsp. olive oil
    1 small clove garlic, minced
    1/2 c. tomato, seeded and chopped
    1/3 c. dry bread crumbs
    1 Tbsp. grated Parmesan cheese
    1/4 tsp. oregano
    1/4 tsp. salt
    pinch cayenne pepper
Preparation
    Microwave bacon 45 to 60 seconds until slightly underdone. Let stand 5 minutes, covered, to complete cooking.
    Crumble bacon. Cut zucchini lengthwise in half.
    Scoop out centers, leaving 1/4-inch shells.
