Pickle Relish - cooking recipe

Ingredients
    14 lb. cucumbers, quartered
    2 gal. water
    4 c. lime
    2 Tbsp. celery seed
    3 Tbsp. pickling spices, tied in cheesecloth
    1/2 gal. vinegar
    5 lb. sugar
    2 Tbsp. salt
Preparation
    Soak cucumbers, water and lime for 24 hours.
    Rinse and soak in
    clear
    water
    for
    3 hours.
    Grind and soak in celery seed, pickling
    spices,
    vinegar, sugar and salt for 12 hours. Slowly bring
    to
    a boil and cook until dry enough.
    Serves 12 pints.
