Ruth'S Dirty Rice - cooking recipe
Ingredients

1 lb. lean ground meat (beef or pork)
2 Tbsp. flour
2 Tbsp. vegetable oil
1/2 c. chopped onions
1/2 c. chopped celery
1/2 c. green pepper, chopped
2 tsp. salt
1/4 tsp. each: black and red pepper
1 c. chicken broth
3 c. hot cooked rice
1/2 c. chopped green onion tops
Preparation

Brown flour in oil and add onions, celery and green pepper. Cook until tender.
Stir in ground meat and seasoning.
Continue cooking until meat loses red coloring.
Blend in broth.
Cover and simmer 25 minutes.
Stir in rice and onion tops.
Cook 5 minutes longer.
Serves 6.
