Low-Fat Chicken Delight - cooking recipe
Ingredients

1 1/2 lb. cooked chicken breasts, chopped
1/4 (8 oz.) pkg. Neufchatel cheese, softened
1 Tbsp. reduced calorie mayonnaise
1 Tbsp. grated onion
1 Tbsp. sweet pickle juice
1/2 c. finely chopped celery
dash of curry powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 Tbsp. chopped pimento
dash of each: hot sauce and garlic powder
2 Tbsp. chicken broth
Preparation

Combine cheese and mayonnaise, beating until smooth.
Add onion, pickle juice, celery, curry powder, salt, pepper, pimento, hot sauce and garlic powder; mix well.
Stir in chicken and 2 tablespoons broth.
Coat a 2-cup mold with nonstick cooking spray. Pour chicken mixture into prepared mold and chill.
Unmold onto serving plate; serve with Melba toast and raw vegetables.
Makes 2 cups.
