Cheese Rice Ring - cooking recipe

Ingredients
    2 Tbsp. chopped onion
    1 bell pepper, chopped
    2 Tbsp. butter
    1 1/2 c. canned tomatoes
    3 1/2 c. cooked rice
    1/4 tsp. salt
    dash of pepper
    1 1/2 c. grated cheese
Preparation
    Cook onion and bell pepper in butter until tender.
    Add tomatoes and rice.
    Slowly cook until rice has absorbed liquid. Add seasonings and cheese.
    Pack into buttered ring mold.
    Unmold onto serving plate and fill with scrambled eggs.
    Makes 6 servings.
