Ingredients

2 eggs
3 egg whites
1/2 c. low-fat (2%) milk
1 (12 oz.) can evaporated skim milk
3 Tbsp. sugar
1 tsp. vanilla extract
1/2 tsp. maple extract
1/2 tsp. cinnamon
1/8 tsp. ground nutmeg
1/8 tsp. salt
ground cinnamon (for garnish)
Preparation

Preheat oven to 250\u00b0.
Put all ingredients except cinnamon in blender and blend well.
Pour mixture into baking dish or 4 individual ovenproof dishes and sprinkle generously with cinnamon. Place baking dish in preheated oven (if using small dishes, put on baking sheet) and bake 1 hour or until set.
May be served warm, at room temperature or cold.
Serves 4.
