King Ranch Chicken - cooking recipe

Ingredients
    1 hen or 2 fryers
    salt and pepper
    2 cans cream or mushroom soup
    2 cans cream of chicken soup
    1 can Ro-Tel tomatoes and green chilies
    1 large onion, chopped fine
    1 small bell pepper, chopped fine
    1 lb. Velveeta cheese
Preparation
    Cook hen
    or fryers with salt and pepper.
    Simmer until the meat falls
    off the bones; remove bones.
    Cut meat in bite size pieces.
    In
    large
    container
    mix
    meat
    with
    cream
    of mushroom soup,
    cream
    of chicken soup and Ro-Tel tomatoes and green chilies.
    In
    small
    amount
    of broth, simmer onions and pepper until
    tender.
    Add
    to
    chicken mixture.
    Line a large baking dish with 6 tortillas.
    Pour 1/2 of chicken mixture and top with 1/2 pound Velveeta cheese.
    Repeat, topping with last 1/2 pound cheese.
    Bake
    in
    350\u00b0 oven until cheese melts and starts to brown.
    Serve
    with
    slaw,
    pinto beans and Mexican cornbread.
