Ingredients

2 pie crusts
10 to 12 apples, peeled, cored and cut into slices
1 1/2 Tbsp. tapioca
1 Tbsp. Sweet 'N Low (Equal or any sugar substitute)
1 tsp. cinnamon
1 1/2 c. unsweetened apple juice
Preparation

Preheat oven to 425\u00b0.
Arrange 1 layer of apples in bottom of crust.
Sprinkle with tapioca, Sweet 'N Low and cinnamon.
Arrange second layer of apples and repeat sprinkling as on first layer (same amounts).
Pour in unsweetened apple juice.
Cover with second crust, cutting slits in top to release steam.
Bake for 15 minutes at 425\u00b0, then reduce heat to 375\u00b0 and bake for an additional 45 minutes.
