Green Chili Enchiladas - cooking recipe
Ingredients

1 large onion, chopped
2 Tbsp. butter
1 can chopped green chilies
2 cans cream of chicken soup
1 can evaporated milk
2 doz. corn tortillas
1/2 c. cooking oil
3 c. grated Longhorn cheese
Preparation

Cook onion in butter until tender.
Add chilies, soup and milk; mix well.
Dip one tortilla into hot cooking oil, just long enough to make limp and place into 9 x 13-inch Pyrex dish.
Add 2 generous tablespoons of chicken soup mixture and a small amount of cheese.
Roll enchilada style.
Repeat process until all tortillas are used, then pour remaining soup mixture over top and sprinkle with cheese.
Bake at 350\u00b0 for 25 to 30 minutes.
Yields 12 servings.
