Lamb And Lentil Stew - cooking recipe

Ingredients
    2 1/2 c. (1 pkg.) dried lentils
    4 c. liquid from soaked lentils (and water if needed)
    2 1/2 lb. lamb shoulder
    flour
    salt and pepper
    3 Tbsp. butter
    1 c. chopped onion
    2 cloves crushed garlic
    1/4 c. chopped celery
    4 tsp. Worcestershire sauce
    1/2 tsp. oregano
    4 c. water
    2 c. carrots, finely diced
Preparation
    Wash and pick over lentils.
    Put into deep bowl.
    Cover with water.
    Soak overnight.
    Drain.
    Measure liquid and add enough water to make 4 cups.
    Add lentils and simmer until tender.
