Tater Swiss Omelet - cooking recipe

Ingredients
    1/2 c. butter
    6 medium potatoes
    12 slices bacon, cooked and cubed
    1 (4 oz.) can mushrooms, sliced and drained
    1 c. shredded Swiss cheese
    6 eggs, separated
Preparation
    Melt butter in large frying pan.
    Add potatoes and fry until brown.
    Place in 9-inch square baking dish.
    Sprinkle with cooked and crumbled bacon.
    Stir together egg yolks, mushrooms and cheese.
    Beat egg whites until stiff, but not dry.
    Fold cheese mixture into whites.
    Pour over bacon.
    Bake in preheated oven at 350\u00b0 for 25 to 30 minutes or until set.
    Serves 6.
