Sauerkraut Salad - cooking recipe
Ingredients

1 lb. can sauerkraut
1 c. chopped celery
1 can (2 oz.) diced pimento
1 large onion, chopped
1 large carrot, grated
2/3 c. apple cider vinegar
1 green pepper, cut up fine
1 1/4 c. white sugar
1/4 tsp. celery seed
1/4 c. salad oil
Preparation

Combine sauerkraut (cut with kitchen shears if stringy) with celery, pimento, onion, pepper and large carrot.
Mix in another bowl 2/3 cup vinegar with salad oil, sugar and celery seed (dressing).
Combine dressing and pour over vegetables.
Cover and let stand overnight.
Keeps a long time in the refrigerator.
