Easy Potato Salad Mold - cooking recipe
Ingredients

4 c. diced, cooked potatoes
1 c. diced celery
1/2 c. diced onion
1/2 c. diced sweet pickles
4 hard-boiled eggs, chopped
1 c. mayonnaise
1/2 tsp. salt
1 envelope unflavored gelatin
1/2 c. sweet pickle juice
Preparation

Combine potatoes with celery, onion, pickles, eggs, mayonnaise and salt.
Soften gelatin in 1 tablespoon of water.
Heat pickle juice; dissolve gelatin in juice, stirring until dissolved.
Add gelatin mixture to potato salad.
Stir well to blend.
Spoon into greased mold.
Chill until firm (more flavorful if chilled overnight).
Unmold to serve.
