Papago Tepary Bean Soup - cooking recipe

Ingredients
    2 c. Tepary beans, soaked
    6 c. water
    4 slices bacon, diced
    1 medium onion, chopped
    2 carrots, sliced
    1 clove garlic, diced
    3 c. tomatoes with juice
    1 tsp. mixed oregano and cumin
    1 c. diced celery
Preparation
    Drain soaked beans and bring to boil in big pot.
    When tender, fry bacon until limp.
    Remove bacon; add onion, carrots, celery and garlic and saute.
    Add bacon, tomatoes and juice and spices. Cook 10 minutes; add beans.
    Cook
    another hour until beans are mealy-tender.
    Serves 6.
    Serve with flour tortillas or fresh frybread.
