Cranberry-Mandarin Glazed Pork Roast - cooking recipe
Ingredients

4 lb. boneless pork loin roast
1/4 tsp. cinnamon
1/2 tsp. grated mandarin peel
2 Tbsp. dry sherry
1 (16 oz.) can whole berry cranberry sauce
2 tsp. cornstarch
1/8 tsp. salt
2 Tbsp. mandarin juice
Preparation

In a small saucepan stir together all ingredients except pork. Cook stirring over medium heat until the sauce is thickened, set aside.
Place roast in a shallow baking dish, brush with thickened sauce.
Roast at 325\u00b0 for 30 minutes.
Spoon 1/2 cup of the prepared glaze over the roast, continue roasting for 30 to 45 minutes more until internal temperature of roast is 155\u00b0 to 160\u00b0. Let the roast stand 10 to 15 minutes before slicing.
Slice and serve with the remaining sauce.
Serves 10 to 12.
