Irish Potato Soup - cooking recipe

Ingredients
    4 large potatoes
    2 1/2 c. milk
    1 Tbsp. butter
    1 medium onion
    salt and pepper to taste
    2 Tbsp. parsley (optional)
Preparation
    Peel potatoes and onion.
    Chop in large pieces.
    Cover with water in saucepan; boil until soft.
    Cool slightly; put through food processor or blender.
    Return to saucepan with milk; bring to boil.
    Season to taste.
    Add the butter.
    Serves 6.
    Serve sprinkled with parsley, if desired.
