Peanutty Stuffed Apple Wedges - cooking recipe
Ingredients

1 (3 oz.) pkg. soft cream cheese
1/2 c. chunky peanut butter
3 Tbsp. orange juice
1 Tbsp. honey
1/2 c. chopped dried fruit mix
1/4 c. coconut
6 apples
1 Tbsp. water
1 Tbsp. lemon juice
Preparation

Stir together cream cheese and peanut butter.
Add orange juice, 1 tablespoon at a time, stirring well.
Stir in honey, dried fruit and coconut.
Cut each apple into quarters lengthwise. Core apple and remove ends.
Hollow out wedges to within 1/2-inch of peel.
Reserve pulp.
Combine lemon juice and water; brush over apple.
Chop apple pulp and add to peanut butter mix.
Fill apple wedges with peanut butter mixture.
