Okra Croquettes - cooking recipe

Ingredients
    2 c. finely chopped raw okra
    1/4 c. finely chopped onion
    1 egg
    1 Tbsp. flour
    3 Tbsp. corn meal
    1/2 tsp. salt or to taste
    1/4 tsp. black pepper
    1/2 c. cooking oil or bacon drippings
Preparation
    Combine okra, onion, flour, cornmeal, salt and pepper.
    Beat egg slightly and add to okra mixture.
    Mix well.
    Heat cooking oil in skillet (I use safflower oil).
    Drop okra from a tablespoon in hot oil.
    Flatten with a pancake turner.
    Cook about 3 minutes on each side.
    Drain on paper towels.
    Serves 6.
