Chicken Athena - cooking recipe

Ingredients
    1 lb. boneless chicken, skinned and cut into cubes
    1 Tbsp. olive oil
    1 onion, cut into chunks
    1 (14 1/2 oz.) can Del Monte original recipe stewed tomatoes
    1 (6 oz.) jar marinated artichoke hearts
    1/4 tsp. rosemary, crushed
    1/3 c. crumbled Feta cheese (optional)
Preparation
    In skillet, brown meat in oil.
    Add onion and cook 2 minutes. Stir in tomatoes, marinade from artichokes and rosemary.
    Cook over medium heat 10 to 15 minutes or until thickened, stirring frequently.
    Stir in artichoke hearts.
    Heat through.
    Top with cheese.
    Garnish with chopped parsley, if desired.
    Serve with rice.
