Chicken Salad - cooking recipe
Ingredients

5 c. cut-up, cooked chicken
2 Tbsp. oil
2 Tbsp. orange juice
2 Tbsp. vinegar
1/2 tsp. salt
1 1/2 c. mayo
3 c. cooked macaroni
1 1/2 c. seedless grapes
1 1/2 c. sliced celery
1 c. pineapple bits, drained
1 c. cashews
1 c. mandarin orange segments, drained
Preparation

In large bowl, combine chicken with oil, orange juice, vinegar and salt.
Cover and refrigerate overnight or at least 3 hours. Just before serving, add remaining ingredients.
Toss gently. Makes 12 servings.
