Tropical Carrot Cake - cooking recipe
Ingredients

2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. allspice
4 eggs
2 c. sugar
1 1/4 c. oil
2 c. shredded raw carrots
1 can drained, crushed pineapple
1 c. flake coconut
1 c. chopped walnuts
Preparation

Sift dry ingredients and set aside.
In a large bowl, with mixer, beat eggs slightly.
Add sugar; beat until thick and lemon colored.
Fold in oil.
Add dry ingredients slowly.
Stir in carrots, pineapple, nuts and coconut.
Mix well.
