New Mexican Cherry Bombs(Yields 24 Appetizers) - cooking recipe

Ingredients
    24 jalapeno chilies
    flour (for dredging)
    2 eggs, beaten
    8 oz. Monterey Jack or Cheddar cheese
    vegetable oil (for deep-fat frying)
Preparation
    Slit each chili.
    Remove seeds with a small spoon or knife and stuff chilies with pieces of cheese.
    If necessary, insert a toothpick to hold chili together.
    Dip each stuffed chili in flour, then egg, then in flour again.
    Deep-fry at 350\u00b0 or until chilies are golden brown.
    Drain and serve.
